Cilantro Lime Chicken easily falls in my family’s top 5 favorites. It has bright flavors and hits the spot every single time. It’s a one pot dish so cleanup is easy and it calls for white wine so that’s an excuse to have a glass while cooking. You’re welcome 😉
Cilantro Lime Chicken
Ingredients
Seasoning Mix
- 2 tsp salt
- 1 tsp black pepper
- 1 tbsp garlic powder
- 1 tbsp paprika
Ingredients
- 8 chicken thighs or 4 chicken breasts
- 6 cloves or garlic minced
- 1 bunch cilantro
- 1 cup white wine
- 2 cups chicken broth/stock
- 2 limes juiced
- Extra Virgin Olive Oil
Instructions
- Preheat oven to 375°
- Mix seasons together
- Season both sides of chicken
- Heat pan and 2 tablespoons of olive oil to medium high
- Sear/Blacken each side of the chicken
- Remove chicken from pan and set aside
- Turn down heat to medium low
- Pour white wine into pan to deglaze
- Let simmer for a few minutes then add in chicken broth/stock
- Add in garlic and lime juice
- Add chicken back into pan and sprinkle with cilantro
- Let simmer on Medium heat for 5 minutes
- Cover with lid and cook in over for 45 minutes or until chicken reads 180°
- Serve over cous cous, rice or quinoa
- Spoon extra juice over the chicken on your plate
