Cilantro Lime Chicken

Cilantro Lime Chicken easily falls in my family’s top 5 favorites. It has bright flavors and hits the spot every single time. It’s a one pot dish so cleanup is easy and it calls for white wine so that’s an excuse to have a glass while cooking. You’re welcome 😉

Cilantro Lime Chicken

Cilantro Lime Chicken

Ingredients
  

Seasoning Mix

  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp paprika

Ingredients

  • 8 chicken thighs or 4 chicken breasts
  • 6 cloves or garlic minced
  • 1 bunch cilantro
  • 1 cup white wine
  • 2 cups chicken broth/stock
  • 2 limes juiced
  • Extra Virgin Olive Oil

Instructions
 

  • Preheat oven to 375°
  • Mix seasons together
  • Season both sides of chicken
  • Heat pan and 2 tablespoons of olive oil to medium high
  • Sear/Blacken each side of the chicken
  • Remove chicken from pan and set aside
  • Turn down heat to medium low
  • Pour white wine into pan to deglaze
  • Let simmer for a few minutes then add in chicken broth/stock
  • Add in garlic and lime juice
  • Add chicken back into pan and sprinkle with cilantro
  • Let simmer on Medium heat for 5 minutes
  • Cover with lid and cook in over for 45 minutes or until chicken reads 180°
  • Serve over cous cous, rice or quinoa
  • Spoon extra juice over the chicken on your plate
